Switzerland vs France - Swiss Rösti with Salad and Quark - World Cup Recipes

In footballing terms we had a cracker of a game in the form of Switzerland vs France which ended up finishing 2-5! France are more and more looking like shaking off their dark horse contender status to full blown contenders. Providing that they don't implode (South Africa 2010). 

It also on a side note, Costa Rica nailed the proverbial coffin shut by beating Italy... no kiss from the queen then Balotelli? 

In terms of food for today I decided to go with rösti as in a country that has 3 distinct cuisine styles, French, German and Italian, it was difficult to narrow it to a dish that is Swiss and eaten by all 3 parts of the country. Rösti fulfilled this. 

Ingredients:

1kg of good quality potatoes
1 onion, finely chopped
4 rashers of thin bacon finely chopped 
100g of Gruyère sliced
Olive oil 
Half a lettuce
50g tomatoes
30g of Parmesan shavings 
Salad dressing of choice
70g of Quark
Half a small bunch of dill finely chopped
Half a small bunch of chives finely chopped
Juice of a lemon
 

INSTRUCTIONS

Rösti

1) Boil the potatoes in skins for 20-25 minutes, until just tender. Leave to cool, peel, then coarsely grate into a bowl.
2) Heat 1 tbsp of olive oil in a medium non-stick frying pan, add the onion and bacon and fry for 7-8 minutes, stirring occasionally, until the onion is softened and lightly tinged with brown.  
3) Stir the onion, bacon and any juices left in the pan into the grated potato. Season with salt and pepper and mix well. 
4) Heat 1 tbsp of oil in the frying pan, add half the potato mixture and spread over the pan. Lay the Gruyère over the mix evenly. Spread the remaining potato over the top to seal in the cheese and press down lightly with the back of a wooden spoon. 
5) Cook the rösti over a moderate heat for 8 minutes until the underside is nicely browned, then put a large plate on top and invert the rösti onto it. Add another tablespoon of oil to the pan if you need to, then slide the rösti back into the pan and cook the other side for 8 minutes.  

  


Quark and Salad

1) Spoon your quark into a medium sized bowl, add the chopped dill, chive and lemon juice and mix well.
2) Mix the lettuce, tomato Parmesan and salad dressing into a big bowl and shake vigoursly
