DAY 1 - BRAZILIAN FISH CURRY
What a shocking opening ceremony. What a game. Croatia was very strong and scored the first world cup goal in 2014 but of course Brazil won 3:1 at the end.
As it was the first day of the world cup we had to go for a Brazilian dish! Normally I would associate meat skewers rather that a fish curry with Brazil, but looking into Brazilian cooking I came across loads of dishes I have never heard of before. So for the first day I cooked Moqueca (Brazilian Fish Curry/Stew). It is a very light and fragrant dish, which is great on hot summer days. My day at work was a bit crazy so I was glad that this dish only took approx. 25 minutes. I marinated the cod fillets a day before so it was even quicker. Overall Moqueca reminds me a bit of a Thai red curry, because of the coconut milk and coriander but this Brazilian curry is usually not spicy. If you like a bit more spice you can of course add some chili flakes on top (like we did!).
You can serve rice with this dish or just simply eat it as a stew/soup. It's a thin curry so a little bowl works magic when served with rice.
Ingredients
Marinade
1 tablespoons lime juice
1 tablespoon ground cumin
1 tablespoon paprika
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
1 1/2 pounds cod fillets, cut into chunks
2 tablespoons olive oil
2 onions, chopped
2 large peppers, sliced
1 (16 ounce) can diced tomatoes, drained
1 (16 ounce) can coconut milk
1 bunch fresh coriander, chopped (optional)
Directions
1. Mix the ingredients for the marinade. Add the cod pieces and coat. Cover and refrigerate overnight.
2. Slice the onions and fry them in olive oil for 1 or 2 minutes on high temperature. Add the sliced peppers, fish and tomatoes on top of the onion. Cook this on medium heat for 5 minutes.
3. Add the coconut milk to the dish, cover the pot and simmer for 15 minutes. Stir occasionally. If you like coriander add it and let it simmer for a few more minutes.
4. Serve and add fresh coriander, lime or chili flakes if you would like to add more flavour.
