SPAIN VS NETHERLANDS - SPANISH ASPARAGUS SALAD RECIPE


DAY 2 - SPANISH TAPAS - ASPARAGUS SALAD - PATATAS  BRAVAS

Initially we planned to cook the asparagus with hollandaise (Dutch Style) but it was soooo hot today that there was no way on earth that we could have eaten that for dinner. On hot days like this you need something light and refreshing. So we opted for a Spanish asparagus salad with a lemon/lime parsley dressing, classic patatas bravas and some yummy meat/cheese combo. It was delicious! To be fair, patatas bravas are not a very new thing on the dinner table but the salad was so light and delicious that I'm sure we'll have it again. 


RECIPE SPANISH ASPARAGUS SALAD

INGREDIENTS

Asparagus spears, trimmed 
3 tbsp. olive oil
4 tbsp. fresh lime or lemon juice (or mix it)
2 tbsp. fresh finely chopped parsley
1 tbsp. salt
2 tbsp. pepper
1/2 red onion, finely chopped
4 cherry tomatoes, halved
1 pepper, sliced




INSTRUCTIONS

1. Boil the asparagus in salted boiling water for 4 minutes, drain and return to plate
2. Add tomatoes and peppers to the plate
3. In a seperate bowl mix the olive oil, lemon juice, salt, pepper, onion and parsley
3. Drizzle the dressing all over the salad and garnish with more chopped parsley or lemon juice if you like
