Colombia vs. Uruguay - Colombian Braised Chicken with Vegetables World Cup Recipe


Hi all!

So tonight we made pollo guisado a la jardinera or let's just call it braised chicken with vegetables. It is a typical Colombian dish, full of flavours and really quick to make! Another great dish for a quick weekday dinner. Even though it is such a simple meal without fancy ingredients I feel like it could become a regular on our dinner tables as it cheap, quick and full of flavour. You can eat it as a soup/stew or serve it with some rice to soak up the delicious tomato sauce.

Whereas I love meat on the bone, the man in the house really dislikes it. It kind of scares him so I used deboned chicken fillets for this meal. If you don't mind the possibility to look like a true caveman (or woman) when eating, choose chicken legs or thighs for this dish. The sauce will have even more flavour that way.


INGREDIENTS

2 tablespoons of vegetable oil

  • 6 skin-on chicken legs or thighs
  • 3 tablespoons of lemon juice
  • 1 pepper, sliced
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 120 ml of chicken broth
  • 1 tin of tomatoes
  • 1 teaspoon of sugar
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon oregano
  • Salt and pepper
  • 2 large carrots, sliced
  • 1 cup green beans, cut into bite size
  • Handful fresh coriander


INSTRUCTIONS

1. Season the chicken legs/thighs with the lemon juice, salt and pepper and set aside for 15 minutes. Now warm up some oil in a sauce pan over medium-high heat and brown the chicken on both sides, about 8 minutes. After this transfer the chicken to a plate.



2. Add the onion and pepper to the same sauce pan and cook until softened, then add the garlic and cook about 1 minute more. 



3. Add the broth, tomato sauce, sugar, cumin and oregano and bring to a boil. Stir all this very well and make sure to scrap off the brown bits at the bottom of the sauce pan (from the chicken).



4. Add the chicken back the pot again, then put the the carrots and green beans in. Cover and simmer on low heat until the chicken is cooked, about 30 minutes. Now sprinkle fresh coriander on top and serve over white rice.



Tipp: If you really like coriander you can add some into the soup in step 3.
