France vs Ecuador - French Piperade - WORLD CUP FOODIES RECIPE



Hi guys!

So this time it was France VS Ecuador and we decided to go for...FRANCE! Vive la France! Thinking of French food reminded me of all the delicious meals Louie and me had when he surprised me with a little trip to Paris for my birthday a few years ago! With the only difference that on a Wednesday evening I really don't feel like cooking a fancy duck, beef bourguignon (which takes ages!) or some weird tartare. Louie actually tried tartare when we went to France and it is definitely not something I would dare to "cook". Even though it is probably a quick meal as you don't really cook it? 

Anyways I decided to cook Piperade - a much more delightful, quick dish originating from the Basque region.  This delicious dish is really a life saver as you'll probably have most ingredients in your kitchen already and it's so quick!

INGREDIENTS

2 tablespoons extra virgin olive oil
- 1 large onion, chopped
- 2 peppers (colour of your choice!), seeded and choppe
- 2 cloves garlic, finely chopped
- ½ teaspoon salt
- 1 teaspoon sweet paprika
- 1 teaspoon ground black pepper
- 2 big tomatoes, roughly chopped
- Crusty bread and spinach (side)
- Feta cheese, chunks
- 2 eggs


INSTRUCTIONS

1. Heat the olive oil in a large pan over medium heat and sauté the onion, peppers, garlic, salt, paprika, black pepper - stir these occasionally for 10 minutes
2. Add the tomatoes to the cooked vegetables and simmer the mixture, for 15 minutes
3. Now add the two eggs and stir the mixture while cooking for another 2 minutes
4. Serve with Feta Cheese on top and some bread as well as salad on the side

Spice it up with some Thyme or Chili if you like!
